It doesn’t just use coffee ice cream, it uses homemade coffee syrup to really enhance that aromatic, bold flavor to the forefront. Chill out with the best coffee drink around!
Ingredients
For the coffee syrup:
- 1 cup sugar
- 1 cup coffee, freshly brewed, hot
- 1/4 teaspoon vanilla extract
For the cabinets:
- 1 pint coffee ice cream
- 1/4 cup whole milk
- 1/4 cup coffee, chilled
- coffee beans, optional, to taste, for garnish
Directions
Step 1 –In a medium saucepan, add the sugar and the 1 cup of the freshly brewed coffee and stir until the sugar dissolves.
Step 2 –Bring the mixture to a light boil on the stovetop.
Step 3 –Reduce the heat to low and simmer until the mixture has reduced to a slightly thickened syrup, about 15 minutes. Be careful not to thicken it too much, as it will not blend properly if it is too thick.
Step 4 –Transfer the saucepan from the heat and whisk in the vanilla.
Step 5 –Refrigerate the syrup and allow it to cool, about 15 minutes.
Step 6 –Add the ice cream, the milk, the remaining chilled coffee, and 2 tablespoons of the coffee syrup to a blender. Reserve the remaining syrup for another use.
Step 7 –Blend the mixture until smooth.
Step 8 –Pour into glasses and serve garnished with the coffee beans.
