Comfort Spaghetti

No matter how young or old we are, everyone wants to feel comforted. And with Comfort Spaghetti, we’re sure you’ll quickly be soothed and satisfied. This cushiony casserole involves a lounge of spaghetti that’s covered with a perfectly seasoned Velveeta® cheese sauce. There’s shredded chicken in there, too, and it’s all topped with crushed potato chips. Then, it’s baked until bubbly for a honey-I’m-home-so-let’s-eat kind of feeling! Sit back, relax, and wrap yourself up in Comfort Spaghetti for a cozy dinner favorite that involves no worries and no fuss. This is certainly the life!

Ingredients

  • 4 chicken breasts, boneless and skinless
  • water, to taste
  • 12 ounces spaghetti
  • 1/2 cup butter
  • 1 medium onion, chopped
  • 1 (16-ounce) package Velveeta cheese, cut into cubes
  • 1 (10.75-ounce) can condensed cream of mushroom soup
  • 1/2 cup potato chips, crushed

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –In a large pot over medium-high heat, add the chicken and enough of the water to just cover it and boil until it reaches an internal temperature of 165 degrees F.

Step 4 –Transfer the cooked chicken breasts to a plate and use two forks to shred them into bite-sized pieces. Reserve the chicken broth in the pot.

Step 5 –In the same pot, add the spaghetti to the broth and more of the water, as needed. Bring to a boil and cook to al dente, according to the package directions. Drain the water.

Step 6 –In a large pan over medium heat, melt the butter.

Step 7 –Add the onion to the melted butter and cook until it is tender and transparent, about 2-3 minutes.

Step 8 –Decrease the heat to medium-low. Add the cheese and the cream of mushroom soup to the onion mixture and cook, stirring constantly, until the cheese has melted and is smooth. Be careful not to scorch or burn.

Step 9 –Add the cooked spaghetti and the shredded chicken to the sauce and stir to combine.

Step 10 –Pour the spaghetti mixture into the prepared baking dish.

Step 11 –Sprinkle the crushed potato chips over the spaghetti mixture.

Step 12 –Bake the spaghetti mixture until it is bubbly, about 20-30 minutes.

Step 13 –Serve.
