Country Cowboy Casserole

Well, partners, looks like dinnertime’s come around the bend again. Best go on home and whip up something to get your mind off the dusty trails. That’ll be the Country Cowboy Casserole we reckon: a meaty, beefy, creamy filling underneath layers of good-old-fashioned corn and cheese and a crispy, tender-on-the-inside tater tot crust. No matter what cattle rustling turmoil might be going on outside, there’s always a good day to be had with Country Cowboy Casserole on your dinner table.

Ingredients

  • 1 pound lean ground beef
  • 1 medium onion, minced
  • 3 cloves garlic, minced
  • 1 (14-ounce) can diced tomatoes
  • 1 cup sour cream
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 cups frozen corn, thawed
  • 2 cups cheddar cheese, grated
  • 26 ounces tater tots

Directions

Step 1 –Preheat the oven to 425 degrees F.

Step 2 –Cook the lean ground beef in a large frying pan over medium-high heat until only a little pink remains, about 5 minutes.

Step 3 –Add the onion and the garlic and continue to cook until the onion is softened, about 5 minutes.

Step 4 –Mix the tomatoes and the sour cream into the beef.

Step 5 –Season the beef mixture with the salt and the pepper.

Step 6 –Pour the creamy beef mixture into a 9×11-inch casserole dish.

Step 7 –Top the beef layer with the corn and the cheese.

Step 8 –Arrange the tater tots in a single layer on the top of the casserole.

Step 9 –Bake until the tater tots are crispy and brown, about 25-30 minutes.

Step 10 –Serve.
