Country Morning Casserole

You need something hearty and tasty before you head out, and this is exactly what you’re gonna want. It’s loaded with lots of protein brought to you by the salty ham, crispy bacon, and fluffy eggs. And if that doesn’t do it for ya, the tender potatoes will push you over the fullness edge! There’s lots of savory, slightly spicy flavors that will make you excited to wake up and get the day going. Ingredients

  • 4 tablespoons butter, divided
  • 1 tablespoon olive oil
  • 2 cups baked potatoes, cubed, or 2 cups shredded hashbrowns
  • 1 cup ham, cubed
  • 1/2 cup bacon, crumbled
  • 6 mini sweet peppers, sliced
  • 1 jalapeƱo, diced
  • 1/2 cup onion, diced
  • 2 cups fresh mushrooms, sliced
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon coarse ground black pepper
  • 3 tablespoons chives, diced, divided
  • 1 cup cheddar cheese, grated
  • 8 large eggs
  • 2 tablespoons water
  • salt, to taste
  • pepper, to taste
  • 1/2 ripe avocado, sliced

Directions

Step 1 –In a large skillet, over medium-high heat, add 3 tablespoons of the butter and the olive oil and cook until the butter melts.

Step 2 –Add the potatoes to the butter mixture and cook until golden-brown.

Step 3 –Add the ham, the bacon, the sweet peppers, the jalapeƱo, the onion, and the mushrooms to the skillet.

Step 4 –Season the ham mixture with the onion powder, the garlic salt, and the black pepper, and top with 2 tablespoons of the chives.

Step 5 –Cook the ham mixture until the vegetables are tender.

Step 6 –Sprinkle the ham mixture with the grated cheese, cover the skillet, and transfer from the heat.

Step 7 –In a bowl, add the eggs and the water, season with the salt and the pepper, and whisk until light and fluffy.

Step 8 –In a medium skillet, over medium heat, add the remaining butter.

Step 9 –Slowly add the beaten eggs to the skillet and cook until scrambled.

Step 10 –Place the scrambled eggs over the ham mixture.

Step 11 –Top the scrambled eggs with the remaining chopped chives.

Step 12 –Place the avocado over the ham mixture.

Step 13 –Serve.
