Country Potato Pancakes, also known as latkes, prove that pancakes don’t have to be sweet to be amazing! Ingredients

  • 3 large potatoes, peeled
  • 2 large eggs, lightly beaten
  • 1 tablespoon onion, grated
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • vegetable oil, for frying
  • sour cream, optional, to taste, for topping
  • applesauce, optional, to taste, for topping

Directions

Step 1 –Finely grate the potatoes.

Step 2 –Drain any liquid from the potatoes, pressing and squeezing the potatoes as much as possible. The less liquid in the potatoes, the better the texture.

Step 3 –Add the eggs, onion, flour, salt, and baking powder to the grated potatoes, mixing until everything is as combined as possible.

Step 4 –In a frying pan, add the oil until it is 1/8-inch deep.

Step 5 –Heat the oil over medium-high heat.

Step 6 –Once the oil reaches 375 degrees F, drop the potato batter by heaping tablespoonfuls into it.

Step 7 –Flatten each drop of batter into a patty.

Step 8 –Fry until golden brown, about 3-4 minutes per side.

Step 9 –Serve immediately with sour cream and applesauce.
