Equally unclear is when someone realized you could make a Frito Pie for breakfast, but that person deserves a gold medal! Breakfast Frito Pie keeps the classically crunchy corn chip crust but replaces the chili with a bed of fluffy eggs and savory seasoned sausage! The top remains as cheesy and melty as ever, but now there’s creamy, buttery, and tangy Hollandaise sauce infusing everything with its rich goodness. Ingredients

  • 1 pound ground pork sausage meat
  • 1 cup yellow onion, diced
  • 8 eggs
  • 1/2 cup bacon crumbles
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 cups Fritos™ corn chips
  • 1 (1.25-ounce) packet Hollandaise sauce mix, plus ingredients required on package directions
  • 2 cups mozzarella and cheddar cheese blend, shredded

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –In a large saucepan over medium-high heat, add the sausage and the onion.

Step 4 –Crumble the sausage and cook until the onion is translucent and softened and the sausage is cooked through, about 5-7 minutes.

Step 5 –Reduce the heat to medium.

Step 6 –Crack the eggs into a medium mixing bowl, whisking them well.

Step 7 –Pour the beaten eggs into the saucepan with the sausage, stirring everything together.

Step 8 –Add the bacon, the salt, and the pepper to the pan, stirring everything together.

Step 9 –Cook, stirring occasionally, until the eggs are completely cooked, about 4 minutes.

Step 10 –Transfer the saucepan from the heat.

Step 11 –Prepare the Hollandaise sauce according to the package directions.

Step 12 –Add the corn chips to the prepared baking dish, spreading them out evenly.

Step 13 –Spoon the egg and sausage mixture over the corn chips, spreading it out evenly.

Step 14 –Pour the Hollandaise sauce over the egg mixture layer.

Step 15 –Sprinkle the shredded cheese on top of the Hollandaise sauce.

Step 16 –Bake the pie until the cheese on top is completely melted, about 12-15 minutes.

Step 17 –Serve.
