Freddie’s Frito Pie is a beloved Southern tradition made quicker and easier… but definitely no less tasty! A layer of the classic conical corn chips is holding up a spicy, hearty, meaty chili with a fresh punch of seasonings infusing each spoonful! Topped with plenty of melted, creamy cheese, Freddie’s Frito Pie is the best argument for more Southern cooking in your life! It’s no stress and all deliciousness!
Ingredients
- 2 (14-ounce) cans chili con carne with beans or 4 1/2 cups homemade chili
- 1 small yellow onion, chopped into small chunks
- 1 (10-ounce) can roasted diced tomatoes with green chilies
- 1 tablespoon smoked paprika
- 1/2 tablespoon chili powder
- 1/2 tablespoon garlic powder
- 1/2 tablespoon ground cumin
- 1/2 teaspoon table salt
- 1/2 cup cheddar cheese, shredded, divided
- 1/2 cup Monterey Jack cheese, shredded, divided
- 1 (9-ounce) bag Fritos® corn chips
- sour cream, optional, to taste, for serving
Directions
Step 1 -In a large skillet over medium heat, add the chili, the onions, the tomatoes with green chilies and their juices, the paprika, the chili powder, the garlic powder, the ground cumin, and the salt and cook, while stirring, until the mixture reaches a light simmer.
Step 2 -Reduce the heat to medium-low.
Step 3 -Add 3/4 of the cheddar cheese and 3/4 of the Monterey Jack cheese on top of the chili mixture and let it melt without stirring. You may need to place a lid on top of the skillet to help it melt.
Step 4 -Evenly divide the corn chips among six serving plates. Alternatively, you can add the chips to a 9-inch pie plate.
Step 5 -Spoon the chili evenly on top of the chips.
Step 6 -Sprinkle the remaining cheddar and the remaining Monterey jack on top of the chili.
Step 7 -Serve with the sour cream.
