Cream Cheese Banana Bread

Ingredients

  • 3/4 cup unsalted butter
  • 1/2 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 4 ounces cream cheese, softened
  • 4 ounces full-fat Greek yogurt or crème fraîche
  • 4 medium bananas, mashed
  • 3 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon cinnamon, optional
  • 1/2 cup millet, optional, uncooked

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease two 9×5-inch loaf pans.

Step 3 –Melt the butter in a large bowl.

Step 4 –Add the granulated sugar and the brown sugar to the melted butter and whisk well to combine.

Step 5 –Add the eggs, one at a time, mixing after each addition.

Step 6 –Add the vanilla and the salt, mixing to combine.

Step 7 –Add the cream cheese and the Greek yogurt and stir until fully incorporated.

Step 8 –Add the mashed bananas and mix well.

Step 9 –Add the flour, the baking soda, and the cinnamon and stir until the batter just comes together.

Step 10 –Add the millet.

Step 11 –Divide the batter evenly between the two pans.

Step 12 –Bake until a tester inserted into the center of each loaf comes out clean, about 1 hour.

Step 13 –Allow the loaves to cool.

Step 14 –Slice and serve.
