Ingredients

  • 4 chicken breasts, boneless, skinless, halved, and flattened to even thickness
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 2 large eggs
  • 2 cups dry breadcrumbs
  • 1 teaspoon dried basil leaves, optional
  • 1 teaspoon dried oregano, optional
  • vegetable oil, to taste, for frying

Directions

Step 1 –Season the chicken with salt and pepper.

Step 2 –In a shallow bowl, whisk the eggs.

Step 3 –In a second shallow bowl, add the breadcrumbs, basil, and oregano.

Step 4 –Dip each of the seasoned pieces of chicken into the egg mixture and then the breadcrumb mixture. Gently press the breadcrumbs into the mixture while dipping.

Step 5 –Carefully place the coated chicken on a baking sheet.

Step 6 –Let the chicken rest for 10 minutes.

Step 7 –In a large pot over medium heat, heat 2 inches of oil.

Step 8 –Add the rested chicken to the pot. Be sure not to overcrowd, while also placing the chicken away from you to avoid splashing.

Step 9 –Cook the chicken on each side until an instant thermometer inserted into the center reads 165 degrees F, about 6-8 minutes.

Step 10 –Let the cooked chicken rest on a cooling rack for 5 minutes. Serve.
