Ingredients
- 2 large chicken breasts
- 1 1/4 cups panko breadcrumbs
- 1/4 cup parmesan cheese, grated
- 1 teaspoon garlic powder
- 1 egg
- 1/3 cup vegetable oil
- fresh parsley, to taste, chopped, for garnish
Directions
Step 1 –Place the chicken breasts on a plate and freeze for 20 minutes.
Step 2 –Cut the chilled chicken breasts in half horizontally and pound them to 1/4-inch thickness.
Step 3 –In a shallow bowl, add the breadcrumbs, the parmesan cheese, and the garlic powder and stir to combine.
Step 4 –In a bowl, add the egg and whisk until beaten.
Step 5 –Dip the chicken cutlets in the egg then in the breadcrumb mixture, pressing to adhere.
Step 6 –In a large skillet over medium heat, heat the oil.
Step 7 –Gently add the chicken cutlets to the oil and cook until they reach an internal temperature of 165 degrees F and are golden-brown, about 2-3 minutes.
Step 8 –Serve the chicken cutlets garnished with the parsley.
