Crowd-Favorite Corn Casserole

Ingredients

  • 32 ounces frozen corn, thawed
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 1/2 teaspoons chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne, optional
  • 5 ounces queso fresco, grated or crumbled, divided
  • 1/4 cup fresh cilantro, chopped, for garnish

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Pour the corn into a large casserole dish.

Step 3 –Mix the mayonnaise, the sour cream, the chili powder, the garlic powder, the salt, the cayenne, and 1/2 of the queso fresco into the corn until combined.

Step 4 –Bake the casserole until it is heated through and the sides begin to bubble, about 30-40 minutes.

Step 5 –Sprinkle the remaining queso fresco and the cilantro over the casserole.

Step 6 –Serve.
