Ingredients
- 1 tablespoon salted butter, melted
- 2 cups cranberries
- 2 tablespoons brown sugar, plus more to taste
- 1/4 teaspoon ground cinnamon
- 2 sheets (1 box) frozen puff pastry, thawed
- 1/3 cup fig preserves
- 2 (8-ounce) wheels of brie cheese, each cut into 12 slices, with rind on
- 1 egg, beaten
- coarse sugar, optional, for sprinkling
- thyme, optional, for serving
Directions
Step 1 –Preheat the oven to 425 degrees F.
Step 2 –Line a baking sheet with parchment paper.
Step 3 –In a medium bowl, combine the butter, cranberries, brown sugar, and cinnamon.
Step 4 –Cut each sheet of the puff pastry into 6 equal rectangles.
Step 5 –Spread about a tablespoon of fig preserves on each rectangle, leaving a 1/4-inch border around the edges.
Step 6 –Place 2 slices of the brie on top of the spread fig preserves.
Step 7 –Top the brie with the sugared cranberries, pressing them in slightly to adhere them.
Step 8 –Fold the edges of the puff pastry so it encircles and encloses the brie.
Step 9 –Brush the edges of the puff pastry with the beaten egg. Sprinkle the edges with coarse sugar.
Step 10 –Bake the puff pastries until the brie is melted and the puff pastry is golden brown, about 15-20 minutes.
Step 11 –Remove the pastries from the oven and top with thyme.
Step 12 –Serve warm!
