Deviled Chicken

It seems each day we’re faced with a decision when dinner time rolls around. Our shoulder angel appears, just like in the cartoons, to tell us to save money and eat at home, but then, our shoulder devil shows up telling us to enjoy life and order take out. Once you taste this Deviled Chicken, both sides will tell you its tastiness is a sign you should stay home and indulge! The tender, juicy chicken thighs are heavenly in and of themselves. But the tangy, buttery concoction that’s rubbed all over them and added crispy crunch from the savory bread crumbs and salty cashews are what make this alluring dish taste so good it’s almost sinful. Deviled Chicken might just be the solution when it comes to your dinner-time deliberations!

Ingredients

  • 2 teaspoons butter, softened
  • 2 teaspoons cider vinegar
  • 2 teaspoons prepared mustard
  • 2 teaspoons paprika
  • pepper, to taste
  • 4 (1/2 pound) chicken thighs, boneless and skinless
  • 6 tablespoons soft bread crumbs
  • 4 tablespoons cashews, chopped

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Grease an 11×17-inch baking dish.

Step 3 –In a large bowl, combine the butter, vinegar, mustard, paprika, and pepper.

Step 4 –Spread the butter mixture over the chicken thighs and place them in the prepared baking dish.

Step 5 –Sprinkle the coated chicken thighs with the bread crumbs.

Step 6 –Bake, uncovered, for 15 minutes.

Step 7 –Carefully sprinkle the cashews over the chicken thighs.

Step 8 –Bake until the chicken juices run clear, the topping is golden brown, and an instant meat thermometer inserted into the center of the chicken reads 170 degrees F, about 7-12 minutes.
