Earthquake Bake

The Earthquake Bake has a distinct look that only hints at its sweetness. The swirls of sweet tangy cream cheese forms cracks and crevices in the cake, so it looks like the cake went through an earthquake. All that goodness gets incorporated straight into the moist chocolate cake! Best of all, beneath the cake are some crunchy pecans and sweet, tropical coconut flakes for an extra punch of flavor! Earthquake Bake will really shake things up!

Ingredients

  • 1 cup margarine, divided
  • 1 cup pecans, chopped
  • 1 cup coconut, flaked
  • 1 (15.25-ounce) box German chocolate cake mix, plus the ingredients called for on the package
  • 1 (8-ounce) package cream cheese
  • 3 3/4 cups confectioners’ sugar

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Melt 1/2 cup of the margarine and spread it in the bottom of a 9×13-inch baking pan.

Step 3 –Sprinkle the pecans and the coconut flakes over the melted butter.

Step 4 –Prepare the cake batter according to the package directions.

Step 5 –Pour the batter over the coconut and the pecans in the pan.

Step 6 –Melt the cream cheese and the remaining margarine in a saucepan over low heat.

Step 7 –Stir in the confectioner’s sugar until the mixture is smooth.

Step 8 –Spoon the cream cheese mixture randomly over the top of the cake batter.

Step 9 –Bake until a toothpick inserted into the center of the cake comes out clean, about 35-40 minutes.

Step 10 –Allow the cake to cool.

Step 11 –Serve.
