Ingredients
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon fresh oregano, chopped
- 1 1/2 pounds Kirby cucumbers, peeled, seeded, and sliced
- 1 cup grape tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 2 tablespoons fresh mint leaves
- 2 tablespoons fresh flat-leaf parsley leaves
- 2 tablespoons fresh dillweed, chopped
- kosher salt, to taste
- freshly ground black pepper, to taste
- 1/2 cup crumbled feta cheese
Directions
Step 1 –In a small bowl, whisk the olive oil, the red wine vinegar, and the oregano together.
Step 2 –In a large bowl, toss the cucumbers, the tomatoes, the red onion, the mint leaves, the parsley, the dillweed, and the vinegar mixture together.
Step 3 –Season the salad with the salt and the pepper and drizzle with the dressing.
Step 4 –Sprinkle the salad with the feta and serve.
