It’s always a sunny day with this dish on the table! Brighten-The-Day Bake will make sunbeams peek through the clouds, or at least make a smile break through the gloom! A tender bed of fluffy eggs holds a treasure trove of tangy, savory artichokes, earthy green onions, beefy mushrooms, and of course, melty cheddar cheese… essentially the best things you could want in your morning meal! Bad moods and rainy weather can’t touch your spirit when it’s uplifted by the heartiness and the flavor of Brighten-The-Day Bake!
Ingredients
- 4 (6.5-ounce) jars marinated artichoke hearts
- 1 tablespoon canola oil
- 1/2 cup green onions, chopped
- 2-3 cloves garlic, minced
- 8 large eggs, lightly beaten
- 1 (4.5-ounce) jar sliced mushrooms, drained
- 3 cups sharp cheddar cheese, shredded
- 1 cup butter-flavored crackers (from about 25 crackers), crumbled
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Coat a 9×13-inch baking dish with cooking spray.
Step 3 –Reserve 1/2 cup of the artichoke marinade, draining the remainder.
Step 4 –Cut the artichokes into slices.
Step 5 –In a small skillet over medium heat, add the oil.
Step 6 –Add the green onions to the hot oil and cook, while stirring, until tender, about 3-5 minutes.
Step 7 –Add the garlic and cook until fragrant, about 1 minute.
Step 8 –Transfer the skillet from the heat.
Step 9 –In a large bowl, add the eggs, the sliced artichoke, the mushrooms, the cheese, the cracker crumbs, the green onion mixture, and the reserved artichoke marinade and stir to combine.
Step 10 –Pour the egg mixture into the prepared baking dish.
Step 11 –Bake, uncovered, until a knife inserted into the center comes out clean, about 35-40 minutes.
Step 12 –Let the bake stand for 5 minutes.
Step 13 –Serve.
