Ingredients
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 teaspoons salt
- 2 teaspoons pepper
- 2 medium carrots, chopped
- 2 stalks celery, chopped
- 1 1/2 pounds skinless, boneless chicken breasts, diced
- 2 cups rice long grain
- 5 cups chicken broth
- 2 bay leaves
- 1 cup half and half
- 1/2 cup frozen peas
- 2 tablespoons parsley fresh, chopped
- 1/4 cup parmesan cheese, grated
Directions
Step 1 –Combine the butter and olive oil in a Dutch oven or large pot over medium heat.
Step 2 –Add the chopped onion and cook until translucent, stirring occasionally.
Step 3 –Add the celery and carrots. Cook until softened.
Step 4 –Add the chicken and season with salt and pepper.
Step 5 –Once the chicken is cooked through, add the rice and chicken broth.
Step 6 –Pour in the half and half.
Step 7 –Place the bay leaves in the pot.
Step 8 –Stir to combine while bringing to a boil.
Step 9 –Once the pot begins to boil, reduce to a simmer and cover to cook for about 20 minutes. This will allow the rice to cook.
Step 10 –Before serving, stir in the frozen peas. Cook for about 2 minutes.
Step 11 –Serve warm in bowls, and garnish with fresh parsley and parmesan cheese.
