Ingredients

  • 2 large russet potatoes, scrubbed
  • 2 tablespoons olive oil
  • salt, to taste
  • ground black pepper, to taste

Directions

Step 1 –Preheat the grill to medium heat.

Step 2 –Poke each potato with a fork.

Step 3 –Place the potatoes in a microwave oven and cook on high power, checking them about halfway through and turning them over for even cooking, until slightly softened, for about 5 minutes.

Step 4 –Slice each potato in half longways.

Step 5 –Cook the potatoes in the microwave for 2 minutes.

Step 6 –Brush the tops of the potatoes with olive oil.
