Ingredients

  • 1 tablespoon cooking oil
  • 7 ounces smoked sausage, sliced into rounds
  • 1 yellow onion, diced
  • 1 (10-ounce) can diced tomatoes with green chiles
  • 8 ounces wide egg noodles
  • 1 1/2 cups chicken broth
  • 3 cups fresh spinach
  • 1 cup Monterey Jack cheese, shredded
  • 1 green onion, sliced

Directions

Step 1 –In a large skillet over medium heat, add the oil and the sausage and cook until the sausage is well-browned.

Step 2 –Drain any excess fat from the skillet.

Step 3 –Add the onions to the skillet and sauté until they soften, about 4-5 minutes.

Step 4 –Add the diced tomatoes with the green chiles and their juices, the egg noodles, and the chicken broth to the skillet and stir until everything is evenly combined.

Step 5 –Cover the skillet and allow the broth to come to a boil.

Step 6 –Turn the heat down to medium-low and let the pasta simmer, stirring occasionally and returning the lid each time, until tender and cooked through with only a small amount of the liquid remaining, about 10 minutes.

Step 7 –Add the spinach to the skillet and gently stir it into the pasta, allowing the heat to wilt it.

Step 8 –Top the pasta with the Monterey Jack cheese.

Step 9 –Cover the skillet and let the pasta cook over low heat until the cheese is melted and creamy.

Step 10 –Sprinkle the pasta with the green onions and serve.
