Ingredients
- 1 tablespoon olive oil
- 4 (4-ounce) chicken breast halves, boneless and skinless
- 1 (14.5-ounce) can of no-salt-added stewed tomatoes
- 1 cup water
- 1 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- 1 1/2 cups instant brown rice
- 1 (12-ounce) package frozen cut green beans
- 12 pitted Greek olives, halved
- 1/2 cup feta cheese, crumbled
Directions
Step 1 –In a large nonstick skillet, warm the oil.
Step 2 –Brown the chicken on each side in the oil.
Step 3 –Stir in the tomatoes, water, oregano, and garlic powder to the chicken.
Step 4 –Bring the chicken mixture to a boil, then reduce the heat.
Step 5 –Cover the skillet and simmer for 10 minutes.
Step 6 –Stir the rice and the green beans into the chicken mixture.
Step 7 –Return to a boil. Cover and simmer until an instant thermometer inserted into the chicken read 165 degrees F and the rice is tender, about 8-10 minutes.
Step 8 –Stir in the olives and sprinkle with the cheese.
