English Muffin Casserole

Simple and basic have never tasted so good! English Muffin Casserole is the ideal go-to breakfast choice for any weekday sunrise. It’s loaded with salty bacon, hearty sausage, fluffy eggs, melty cheese, leafy kale, and a couple scoops of collagen peptides to make sure you’re full and feeling your best! Ingredients

  • 5 English muffins, cut into eighths
  • 8 strips bacon, pre-cooked and chopped
  • 8 sausage links, pre-cooked and chopped
  • 1 cup cheddar cheese, shredded
  • 1 cup kale, chopped
  • 8 eggs
  • 1/3 cup milk
  • 2 scoops collagen peptides
  • salt, to taste
  • pepper, to taste

Directions

Step 1 –Preheat the oven to 325 degrees F.

Step 2 –Lightly grease a 1.5-quart baking dish.

Step 3 –Line the prepared baking dish with the English muffin pieces, the bacon, the sausage, the cheese, and the kale.

Step 4 –In a medium bowl, whisk together the eggs, the milk, the collagen peptides, the salt, and the pepper.

Step 5 –Pour the egg mixture over the English muffin mixture.

Step 6 –Cover the dish with foil and allow it to sit, about 20 minutes.

Step 7 –Bake, covered, for 25 minutes.

Step 8 –Carefully remove the foil from the pan and bake until the eggs have firmly set and the top is lightly golden brown, about 15-20 minutes.

Step 9 –Slice and serve.
