Ingredients
- 5 English muffins, cut into eighths
- 8 strips bacon, pre-cooked and chopped
- 8 sausage links, pre-cooked and chopped
- 1 cup cheddar cheese, shredded
- 1 cup kale, chopped
- 8 eggs
- 1/3 cup milk
- 2 scoops collagen peptides
- salt, to taste
- pepper, to taste
Directions
Step 1 –Preheat the oven to 325 degrees F.
Step 2 –Lightly grease a 1.5-quart baking dish.
Step 3 –Line the prepared baking dish with the English muffin pieces, the bacon, the sausage, the cheese, and the kale.
Step 4 –In a medium bowl, whisk together the eggs, the milk, the collagen peptides, the salt, and the pepper.
Step 5 –Pour the egg mixture over the English muffin mixture.
Step 6 –Cover the dish with foil and allow it to sit, about 20 minutes.
Step 7 –Bake, covered, for 25 minutes.
Step 8 –Carefully remove the foil from the pan and bake until the eggs have firmly set and the top is lightly golden brown, about 15-20 minutes.
Step 9 –Slice and serve.
