English Walnut Date Cake

We love a treat that sounds and looks way fancier than it actually is to make. This English Walnut Date Cake will make you feel like you want to put your pinky up when you tell your friends that’s what you’re bringing to the next ball (or uh, just a normal hangout). Ingredients

  • 1 1/4 cups all-purpose flour, to taste, for dusting the tube pan
  • 2 pounds dates, pitted and chopped
  • 2 pounds English walnuts, coarsely chopped
  • 1 cup white sugar
  • 1 tablespoon baking powder
  • 4 large eggs, yolks and whites separated

Directions

Step 1 –Preheat the oven to 300 degrees F.

Step 2 –Grease a 10-inch tube pan, then dust it with the extra flour.

Step 3 –In a large bowl, add the dates, the walnuts, the remaining 1 1/4 cups of flour, the sugar, and the baking powder and mix to combine.

Step 4 –Stir the egg yolks into the date mixture until they are combined.

Step 5 –In a large metal mixing bowl, add the egg whites and use an electric mixer to beat them until stiff peaks form.

Step 6 –Fold the beaten egg whites into the date mixture until no streaks remain.

Step 7 –Spoon the cake batter into the prepared pan.

Step 8 –Bake the cake until a toothpick inserted into the center comes out clean, about 1 hour 30 minutes.

Step 9 –Transfer the pan to a wire rack and let the cake cool, about 10 minutes.

Step 10 –Invert the cake onto the wire rack and let it cool completely.

Step 11 –Slice and serve.
