“Espresso” Yourself Brownies

You’ll never feel better as you bite into these ooey-gooey squares of chocolatey yumminess that have just a hint of espresso. Who needs the premade stuff when you have these simple and amazingly delicious treats at your fingertips?! “Espresso” Yourself Brownies will make you proud to be who you are, all while satisfying that sweet tooth of yours!

Ingredients

  • 1/3 cup plus 2 tablespoons water, divided
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 2 tablespoons plus 2 teaspoons espresso powder, divided
  • 1 box brownie mix
  • 3/4 cup semisweet chocolate chips
  • 1 teaspoon vanilla extract
  • 1 1/2 cups powdered sugar
  • 1 tablespoon unsalted butter, room temperature

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Coat a 9×13-inch baking pan with nonstick spray.

Step 3 –In a large bowl, whisk 1/3 cup of the water, the oil, the eggs, and 2 tablespoons of the espresso powder together.

Step 4 –Add the brownie mix to the egg mixture and stir until it is well blended.

Step 5 –Stir the chocolate chips into the brownie batter.

Step 6 –Bake the brownies until a toothpick inserted into the center comes out with a few moist crumbs attached, about 35 minutes.

Step 7 –Let the brownies cool completely.

Step 8 –While the brownies are cooling, in a medium bowl, dissolve the remaining espresso powder in the remaining water.

Step 9 –Whisk the vanilla into the espresso mixture.

Step 10 –Add the powdered sugar and the butter to the espresso mixture and whisk until it is smooth.

Step 11 –Pour the glaze over the cooled brownies and refrigerate them until the glaze has set, about 3 hours.

Step 12 –Cut the brownies into bite-size pieces and serve.
