Even if you’ve never heard of Eton Mess, you can’t pass this dessert up! This sweet treat is a creamy dream made of rich whipping cream, fine sugar, melt-in-your-mouth meringues, and juicy strawberries. The freshness of the strawberries is balanced out perfectly by the richness of the cream for a dessert that is the perfect combination of textures and flavors. Ingredients
- 1 1/4 cups whipping cream
- 1 tablespoon fine sugar
- 1 2/3 cups ready-made meringues
- 3 cups fresh strawberries
- confectioners’ sugar, optional, to taste, for topping
Directions
Step 1 –Place the whipping cream in a large mixing bowl.
Step 2 –Add in the sugar and whip with an electric whisk until the cream is light and fluffy. Do not over whip.
Step 3 –Break the meringue into large, bite-sized chunks.
Step 4 –Gently stir the meringue into the cream. Do not worry if some of the meringue crumbles.
Step 5 –Place half of the strawberries into another large mixing bowl.
Step 6 –Press the strawberries in the bowl gently with the back of a fork to break up the strawberries slightly and release some of their juices. Do not be too heavy-handed, as this should not be a puree.
Step 7 –Stir the strawberries gently into the whipped cream.
Step 8 –Halve and then quarter the remaining strawberries.
Step 9 –Place the cream mixture into a 7-inch glass serving dish.
Step 10 –Top the cream with the crushed strawberry pieces.
Step 11 –Chill in the refrigerator for 30 minutes.
Step 12 –Sprinkle with confectioners’ sugar.
Step 13 –Serve.
