Ingredients

For the casserole:

  • 1 loaf sourdough or French bread, cut into 1-inch chunks
  • 8 large eggs
  • 2 cups whole milk
  • 1/2 cup sugar
  • 1/4 cup light brown sugar, loosely packed
  • 2 tablespoons vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 1 1/2 cups canned pumpkin puree

For the topping:

  • 3/4 cup all-purpose flour
  • 3/4 cup light brown sugar, firmly packed
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cut into pieces

Directions

Step 1 –Grease a 9×13-inch baking dish.

Step 2 –Evenly spread the bread pieces in the bottom of the prepared baking dish.

Step 3 –In a large bowl, whisk together the eggs, the milk, the sugar, 1/4 cup of the brown sugar, the vanilla, 1 1/2 teaspoons of the cinnamon, and the pumpkin.

Step 4 –Evenly pour the pumpkin mixture over each of the bread pieces.

Step 5 –Cover the casserole and store in the fridge for at least 5 hours and up to overnight.

Step 6 –In a large bowl, combine the flour, the remaining brown sugar, the remaining cinnamon, the nutmeg, the cloves, the ginger, and the salt.

Step 7 –Add the butter to the spice mixture and cut into it until it comes together as a crumble.

Step 8 –Cover the crumble and store in the fridge for at least 5 hours and up to overnight.

Step 9 –Preheat the oven to 350 degrees F.

Step 10 –Evenly sprinkle the chilled crumble over the chilled casserole.

Step 11 –Bake until heated through and the topping is lightly golden, about 45 minutes.

Step 12 –Serve.
