Why is it called the Famous Kid Bake? Well, because kids just can’t get enough of it! Seriously! Every bite is ooey-gooey, tangy, creamy, and cheesy, stuffed full of vibrant Tex-Mex seasonings and flavors, and it has plenty of savory chicken to boot! And it’s topped with nacho cheese-flavored tortilla chips! This feels like something a kid would create if they had unlimited power in the kitchen. So really, the Famous Kid Bake is giving the kids at the table their dream dinner!
Ingredients
For the bake:
- 1 (9.75-ounce) bag nacho-cheese flavored tortilla chips, divided
- 2 cups sour cream
- 2 cups salsa
- 3 cups rotisserie chicken, shredded
- 6 medium-sized flour tortillas
- 1 (1-ounce) package taco seasoning
- 1 (10.5-ounce) can cream of chicken soup
- 1 (10-ounce) can diced tomatoes with green chilies
- 1 (15-16-ounce) can pinto beans, optional, drained, can substitute corn kernels, drained
- 1 (8-ounce) package Mexican shredded cheese blend
Optional toppings:
- lettuce, to taste, shredded
- cheese, to taste, of your choice, shredded
- cilantro, to taste, chopped
- tomatoes, to taste, diced
- onions, to taste, chopped
- nacho cheese-flavored tortilla chips, to taste, crushed
- sour cream, to taste
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Grease a 9×13-inch casserole dish.
Step 3 –Crush 2 cups of the tortilla chips in a large resealable plastic bag.
Step 4 –In a medium bowl, stir 2 cups of the sour cream and the salsa together.
Step 5 –Combine the crushed chips, 1/2 cup of the salsa mixture, and the shredded chicken in the large resealable plastic bag, shaking vigorously so the chicken is evenly coated.
Step 6 –Layer 2 of the flour tortillas in the bottom of the prepared casserole dish.
Step 7 –Sprinkle the tortillas with 2 teaspoons of the taco seasoning.
Step 8 –Sprinkle 1/3 of the chicken mixture over the seasoned tortillas in the baking dish.
Step 9 –Stir the cream of chicken soup into the remaining salsa mixture.
Step 10 –Spread 1/3 of the chicken soup mixture over the chicken layer.
Step 11 –Layer 1/3 of the tomatoes with green chilies and 1/3 of the pinto beans over the chicken soup mixture.
Step 12 –Sprinkle 1/4 of the shredded cheese on top of the tomato-bean layer.
Step 13 –Repeat the layers twice, using all of the remaining tortillas, the remaining taco seasoning, the remaining chicken mixture, the remaining chicken soup mixture, the remaining tomatoes, the remaining beans, and 2/3 of the remaining shredded cheese.
Step 14 –Top the casserole with the remaining shredded cheese.
Step 15 –Crush the remaining tortilla chips over top of the cheese layer.
Step 16 –Cover the casserole dish loosely with foil and bake for 20 minutes.
Step 17 –Remove the foil and bake until the cheese starts to brown and the casserole is heated through, about 10 minutes.
Step 18 –Serve with your favorite optional toppings!
