It’s Easy Quiche Casserole, a creamy, tender, savory delight of eggs and your favorite fillings! Breakfast is a breeze from now on!
Ingredients
- 1 (9-inch) pre-made pie crust, thawed (if frozen)
- 2 tablespoons olive oil
- 3-4 cups mixed raw vegetables, such as broccoli, onions, mushrooms, bell peppers, and spinach
- 6 eggs
- 3/4 cup milk or cream
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon nutmeg
- 1 cup ham or bacon, optional, cooked
- 1 1/2 cups cheese, of your choice, shredded
- parsley, optional, to taste, freshly chopped, for garnish
Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –Shape the pie crust to fit a 9×13-inch casserole dish or a 9-inch pie plate, crimpling and cutting as needed so the dough covers the bottom and the edges of the dish, and pressing down to seal any seams.
Step 3 –In a large skillet over medium-high heat, heat the olive oil.
Step 4 –Add the vegetable mixture and cook until the vegetables have softened, about 5-10 minutes.
Step 5 –In a bowl, whisk the eggs, the milk, the salt, the pepper, and the nutmeg together.
Step 6 –Layer the vegetable mixture, the ham, and the cheese into the pie crust.
Step 7 –Gently add the egg mixture over the filling mixture in the pie crust.
Step 8 –Bake until the eggs are set and the top is slightly brown, about 30-40 minutes.
Step 9 –Allow the quiche to cool for 5-10 minutes.
Step 10 –Serve garnished with the parsley.
