Ingredients
- 1 cup butter, softened
- 2 cups sugar
- 2 large eggs, room temperature
- 2 teaspoons lemon zest
- 2 teaspoons lemon extract
- 4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup buttermilk
Directions
Step 1 -Beat together the butter and the sugar until light and fluffy.
Step 2 -Add the eggs 1 at a time, beating well after each addition before adding the next one.
Step 3 -Beat in the lemon zest and the lemon extract.
Step 4 -Whisk together the flour, the baking soda, and the salt in a separate large bowl.
Step 5 -Add the butter mixture and the buttermilk into the bowl with the dry ingredients mixture, alternating between the two and adding about 1/3 of each at a time.
Step 6 -Cover and refrigerate the bowl until the dough’s gluten relaxes and the butter solidifies, about 1 hour 45 minutes.
