Corn Feta Salad

Ingredients

For the salad:

  • 3 ears sweet corn, shucked and kernels cut off
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup parsley, chopped
  • 1 jalapeño, sliced
  • 1 tablespoon mint, chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon flaky sea salt
  • 2 tablespoons fresh lime juice

Optional garnishes:

  • cilantro, optional, to taste, chopped
  • lime wedges, to taste
  • mint leaves, to taste

Directions

Step 1 –In a large bowl, add the corn kernels, the feta cheese, the parsley, the jalapeño, and 1 tablespoon of the mint and toss to combine.

Step 2 –Top the salad with the oil, the sea salt, and the lime juice and stir to combine.

Step 3 –Serve the salad garnished with the cilantro, the lime wedges, and the remaining mint leaves.
