- 1/4 cup feta cheese, crumbled
- 1/4 cup parsley, chopped
- 1 jalapeño, sliced
- 1 tablespoon mint, chopped
- 1 tablespoon olive oil
- 1/2 teaspoon flaky sea salt
- 2 tablespoons fresh lime juice

- cilantro, optional, to taste, chopped
- lime wedges, to taste
- mint leaves, to taste
Directions
Step 1 –In a large bowl, add the corn kernels, the feta cheese, the parsley, the jalapeño, and 1 tablespoon of the mint and toss to combine.
Step 2 –Top the salad with the oil, the sea salt, and the lime juice and stir to combine.
