Ingredients

For the cake:

  • 1/4 cup butter, very soft
  • 1 cup light or dark brown sugar, firmly packed
  • 1 large egg
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

For the pecan topping:

  • 3 tablespoons butter, melted
  • 1/2 cup light or dark brown sugar, firmly packed
  • 2 tablespoons half-and-half
  • 1/8 teaspoon salt
  • 3/4 cup pecans, diced

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9-inch round cake with baking spray or line it with parchment paper.

Step 3 –In a bowl, add 1/4 cup of the soft butter and 1 cup of the brown sugar and stir until well-combined. The mixture will not be fluffy yet.

Step 4 –Add the egg to the butter mixture and stir until smooth.

Step 5 –Add the buttermilk and the vanilla extract and stir until well-combined.

Step 6 –Sprinkle the flour, the baking soda, and 1/2 teaspoon of the salt evenly over the top of the butter mixture and stir until well-combined.

Step 7 –Pour the batter into the prepared pan.

Step 8 –Bake the cake until a toothpick inserted into the center comes out clean or when the cake springs back when lightly touched in the center, about 30 minutes.

Step 11 –After the cake has cooked for 30 minutes, pour the topping mixture over the cake and bake for an additional 10 minutes.

Step 12 –Transfer the cake from the oven and allow it to cool in the pan until the topping firms up, about 20 minutes.

Step 13 –Slice and serve.
