Thanks to the foil, the chicken is virtually guaranteed to be tender and juicy, and it absorbs all sorts of vibrant, fragrant flavors thanks to being cooked with garlic powder and salsa. Ingredients
- 1 (15-ounce) can black beans, rinsed and drained
- 2 cups fresh or frozen corn, thawed
- 1 cup salsa
- 4 (4-ounce) chicken breast halves, boneless and skinless
- 1/4 teaspoon garlic powder
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
- 1 cup cheddar cheese, shredded
- 2 green onions, chopped
Directions
Step 1 –Preheat the grill to medium heat.
Step 2 –Mix the beans, the corn, and the salsa together.
Step 3 –Divide the bean mixture evenly among four 18×12-inch pieces of heavy-duty foil.
Step 4 –Top the bean mixture with the chicken.
Step 5 –Mix the garlic powder, the pepper, and the salt together and sprinkle the mixture over the chicken.
Step 6 –Fold the foil over the chicken, sealing it tightly.
Step 7 –Grill the packets, covered, until a thermometer inserted into the chicken registers 165 degrees F, about 15-20 minutes.
Step 8 –Open the foil carefully to allow the steam to escape.
Step 9 –Sprinkle the cheese and the green onions over the chicken.
Step 10 –Serve.
