Fiesta Chicken Diablo is devilishly spicy and zesty, with plenty of Tex-Mex-inspired seasonings and flavors to elevate the savory chicken breasts! The perfect mixture of sweet, sour, tangy, creamy, and hot, Fiesta Chicken Diablo is a party for your taste buds!

Ingredients

  • 1/2 cup hot sauce
  • 2 cups sour cream
  • 1/2 cup ketchup
  • 1/4 cup honey
  • 1 1/2 teaspoons smoked paprika
  • 2 teaspoons ground cumin
  • 4 chicken breast cutlets, thinly pounded
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 2 scallions, optional, finely chopped, for garnish

Directions

Step 1 –In a bowl, add the hot sauce, the sour cream, the ketchup, the honey, the paprika, and the cumin and whisk to combine.

Step 2 –In a shallow, rimmed dish, add the chicken.

Step 3 –Pour 1/2 of the sauce mixture over the chicken breasts, reserving the remainder.

Step 4 –Cover the dish and let the chicken marinate in the refrigerator for at least 30 minutes and up to overnight.

Step 5 –In a skillet over medium-high heat, add the vegetable oil.

Step 6 –Add the garlic to the hot oil and cook until fragrant, about 30 seconds.

Step 7 –Lower the heat to medium.

Step 8 –Add the marinated chicken to the hot garlic oil and cook until browned on all sides and it reaches an internal temperature of 165 degrees F, about 10-15 minutes.

Step 9 –In a small saucepan over medium-low heat, add the remaining sauce mixture and cook until warmed through.

Step 10 –Serve the chicken topped with the warmed sauce and the scallions.
