Fruit Crack

There are fruit salads, and then there is THIS! Fruit Crack is the really good stuff, the stuff that reminds you why fruits are such beloved and paradisial treats! A juicy, sweet, vibrantly colorful, and flavorful mix of your favorite fruits, including watermelon, pomegranate, oranges, and blueberries! The cooling fragrance of mint with a floral and electric lime dressing brings out the most of this natural bounty of goodness! Fruit Crack has everything you want and more from your fruit plate!

Ingredients

For the salad:

  • 1 medium pomegranate, halved
  • 2 pounds mandarin oranges, peeled and strings removed, segmented, can substitute oranges or tangerines
  • 1 1/2 pounds seedless watermelon, rinds removed, cut into bite-sized cubes
  • 2-3 kiwis, peeled and sliced
  • 4 ounces blueberries
  • 4 ounces strawberries, optional, hulled and halved
  • 1 cup mint leaves, optional, loosely packed

For the dressing:

  • 1/4 cup honey
  • 1 1/2 tablespoons lime juice

Directions

Step 1 –Over a small bowl, take one of the halves of the pomegranate and, with the cut-side facing your palm and using the back of a spoon, smack the back of the pomegranate so the seeds are released into your hand. Repeat this with the other half.

Step 2 –Place the mandarin orange segments, the watermelon, the kiwis, the pomegranate seeds, the blueberries, the strawberries, and the mint in a large bowl and mix to combine.

Step 3 –Whisk together the honey and the lime juice.

Step 4 –Pour the dressing over the fruit mixture and lightly toss.

Step 5 –Serve.
