Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon sea salt
  • 1 tablespoon fresh cracked pepper
  • 2 pounds pork tenderloin
  • 2 tablespoons garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoons dried sage
  • 3-4 pats of butter

Directions

Step 1 –Preheat the oven to 350 degrees.

Step 2 –Line a baking sheet with aluminum foil.

Step 3 –In a small bowl, combine the garlic, basil, oregano, thyme, parsley and sage. Set aside.

Step 4 –Generously season the meat with salt and pepper.

Step 5 –In a large pan, heat the oil until shimmery. Add the meat to the pan, and cook on all sides until dark golden brown, about 3-4 minutes on each side.

Step 6 –Transfer to a baking sheet.

Step 7 –Generously coat with herb mix. Place the pats of butter on top of the pork.

Step 8 –Wrap the pork in foil, and bake until it is 150 degrees F internally at the widest, thickest part of the tenderloin, about 25 minutes.

Step 9 –When the pork is fully cooked, remove and let rest, tented with foil, for at least five minutes to lock in the juices.

Step 10 –Slice against the grain and serve immediately.
