Ingredients

  • 2 (8-ounce) cartons mushrooms, preferably cremini or baby bella
  • 10 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon table salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons parmesan cheese, finely grated
  • fresh parsley, optional, to taste, chopped, for garnish

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Line a baking sheet with foil.

Step 3 –In a large mixing bowl, add the mushrooms, the garlic, the olive oil, the oregano, the salt, and the pepper and toss until well-mixed.

Step 4 –Transfer the mushroom mixture to the prepared baking sheet, spreading the mushrooms out in a single layer.

Step 5 –Bake the mushroom mixture for 15 minutes.

Step 6 –Drizzle the mushrooms with the balsamic vinegar and toss and flip the mushrooms to ensure they are browning evenly and are evenly coated.

Step 7 –Evenly sprinkle the parmesan cheese over the mushrooms.

Step 8 –Bake until the mushrooms are tender and the vinegar has been baked into the mushrooms, about 10 minutes. Be sure to monitor the mushrooms carefully, as the balsamic vinegar touching the foil can quickly burn.

Step 9 –Serve the mushrooms garnished with the parsley.
