Ingredients
- 1/2 cup plus 4 tablespoons butter, divided
- 2 pints fresh blueberries
- 3/4 cup plus 1 tablespoon sugar, divided
- 1/4 cup water
- 1 cup self-rising flour
- 3/4 cup buttermilk
Directions
Step 1 –Preheat oven to 350 degrees F.
Step 2 –Melt 1/2 cup of the butter in an oven-safe skillet over medium heat.
Step 3 –Pour the blueberries, 3/4 cup of the sugar, and the water into the melted butter and cook until a light syrup forms, about 5-8 minutes.
Step 4 –Mix together the flour and the remaining sugar.
Step 5 –Cut the remaining butter into the flour mixture with a fork just until crumbly.
Step 6 –Stir the buttermilk into the flour mixture until just combined. The dough will be very wet and sticky.
Step 7 –Stir the blueberries and then drop the dough by large 1/4 cup scoops on top of the berries.
Step 8 –Place the skillet in the oven and bake until the dough is cooked through and browned on top, about 15 minutes. The blueberry syrup should have also thickened.
Step 9 –Transfer the skillet from the oven and allow it to cool slightly.
Step 10 –Serve.
