Gooey Butter Bars

Each bite is filled with some caramel-y, buttery goodness in a savory yet sweet crust. In the mood for some fruit, too? Well, these Gooey Butter Bars taste the best with some juicy strawberries sprinkled over the top. You know you need this delightful experience, right?! Just do it; give in and treat yourself!

Ingredients

For the crust:

  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup cold butter

For the filling:

  • 2/3 cup butter, softened
  • 1 1/4 cups granulated sugar
  • 1/4 cup light-colored corn syrup
  • 1 egg
  • 1/2 teaspoon almond extract
  • 1 cup all-purpose flour
  • 2/3 cup half-and-half

For the strawberries:

  • 3 cups fresh strawberries, sliced
  • 2 tablespoons honey
  • 1 teaspoon fresh ginger, grated

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Line a 13x9x2-inch baking pan with parchment paper.

Step 3 –In a medium bowl, add 1 1/2 cups of the flour and 1/4 cup of the sugar and stir to combine.

Step 4 –Use a pastry blender to cut 1/2 cup of the cold butter into the flour mixture until it resembles fine, dry crumbs.

Step 5 –Press the crust mixture into the bottom of the prepared pan.

Step 6 –In a large bowl, add the softened butter and beat with an electric hand mixer on high speed for 30 seconds.

Step 7 –Gradually beat the remaining sugar, the corn syrup, the egg, and the almond extract into the butter mixture until just combined.

Step 8 –Alternately add the remaining flour and the half-and-half to the filling mixture, beating after each addition, until just combined.

Step 9 –Spread the filling into the crust-lined baking pan.

Step 10 –Bake the bars until the center is just set, about 30 minutes.

Step 11 –Let the bars cool in the pan on a wire rack.

Step 12 –Use the parchment paper to lift the bars out of the pan, then cut them into squares.

Step 13 –In a small bowl, add the strawberries, the honey, and the ginger and toss to combine.

Step 14 –Spoon the strawberries over the bars, slice, and serve.
