Greek Chicken Thighs

Greek Chicken Thighs are simple on the surface, yet the flavor they contain is complex and sophisticated. It’s truly amazing what savory chicken with crispy, succulent skin can do when seasoned correctly, and these seasons are nothing to sneeze at! They’re zesty, vibrant, and earthy, and each bite invokes those sunny turquoise waters of the Mediterranean. Let Greek Chicken Thighs whisk you away to the gorgeous shores off the Aegean!

Ingredients

  • 5 chicken thighs, bone-in and skin-on
  • Greek seasoning blend, to taste
  • sea salt, to taste
  • freshly cracked pepper, to taste
  • 1 tablespoon olive oil

Directions

Step 1 –Season both sides of the chicken thighs with the Greek seasoning blend, the sea salt, and the freshly cracked pepper

Step 2 –Add the chicken to a plate and place the plate in the refrigerator, uncovered, for at least 30 minutes and up to 3 hours.

Step 3 –Take the chicken out of the refrigerator 30 minutes prior to cooking.

Step 4 –Preheat the oven to 400 degrees F.

Step 5 –Heat the olive oil in a cast-iron skillet over medium-high heat.

Step 6 –Place the chicken into the skillet, skin-side down, and cook until the skin is golden-brown and flips easily, about 4 minutes.

Step 7 –Flip the chicken over.

Step 8 –Transfer the skillet into the oven and roast the chicken until the chicken is golden-brown and cooked through with the meat reaching an internal temperature of 165 degrees F, about 20-25 minutes.

Step 9 –Serve immediately.
