Ingredients
For the vegan chickpea salad:
- 1 (15-ounce) can chickpeas, rinsed and drained
- 1/4 cup Italian parsley, chopped
- 1/4 cup dill, chopped
- 2 tablespoons whole-grain mustard
- 1-2 tablespoons vegan mayonnaise, homemade or storebought, can substitute regular mayonnaise or 2-3 teaspoons olive oil
- salt, to taste
- pepper, to taste
For the sandwiches:
- 1 tablespoon whole-grain mustard
- 2 bagels, halved, can substitute 4 slices whole-grain bread or sub wraps
- 2 large lettuce leaves
- 1 Turkish cucumber, thinly sliced
- 1 carrot, thinly sliced
- 4 radishes, thinly sliced
- 1 avocado, sliced
- sprouts, such as alfalfa, sunflower, or daikon, to taste
Directions
Step 1 –Place the chickpeas, the parsley, the dill, 2 tablespoons of the mustard, the mayonnaise, the salt, and the pepper in a medium bowl.
Step 2 –Mash the chickpea mixture with a fork until well-combined
Step 3 –Taste the chickpea mixture for seasoning and adjust with the salt and the pepper accordingly.
Step 4 –Spread the remaining mustard on the bagel halves.
Step 5 –Top 2 of the bagel halves with the lettuce and a generous amount of the chickpea salad.
Step 6 –Layer the cucumber, the carrot, the radishes, and the avocado onto the sandwiches.
