Grilled Lemon Chicken

Ingredients

  • 4 (6 ounce) chicken breasts, boneless, skinless, and halved
  • 1/3 cup olive oil, plus more for grilling
  • 1 tablespoon lemon zest
  • 1/3 cup lemon juice
  • 4 cloves garlic, minced
  • 2 teaspoons oregano, dried
  • 1/2 teaspoon basil, dried
  • 1/2 teaspoon thyme, dried
  • 1/2 teaspoon rosemary, dried and crushed
  • salt, to taste
  • ground black pepper, to taste
  • parsley, optional, chopped, for serving

Directions

Step 1 –Even the thickness of your chicken breasts by pounding the meat using a meat mallet or your hands.

Step 2 –In a small mixing bowl, combine the olive oil, the lemon zest, lemon juice, the garlic, the oregano, the basil, the thyme, the rosemary, and the salt and pepper.

Step 3 –In a gallon-sized resealable bag, place the chicken and the marinade.

Step 4 –Massage the bag to mix thoroughly and place in the refrigerator for 2-5 hours to marinate.

Step 5 –Preheat the grill over medium-high heat.

Step 6 –Brush the grill with olive oil.

Step 7 –Cook the chicken with the lid closed until the internal temperature registers 165 degrees F, about 4 minutes per side.

Step 8 –Allow the chicken to rest for 5 minutes, garnish with the parsley, and serve while hot.
