Ingredients

  • 1/4 cup olive oil
  • 1 large onion, diced
  • 1 cup red bell peppers, diced
  • 2 cloves garlic, minced
  • 2 pounds lean ground beef
  • 2 large eggs, beaten
  • 2 tablespoons Italian seasonings
  • 2 teaspoons black pepper
  • 1 teaspoon kosher salt
  • 1 teaspoon granulated garlic
  • 1/2 cup barbecue sauce

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Line a baking sheet with foil. Set aside.

Step 3 –In a skillet over medium heat, add the olive oil, onion, and red bell peppers. Sauté until the vegetables soften, about 5 minutes. In the last minute of cooking, add the garlic and sauté.

Step 4 –Set the vegetable mixture aside to cool slightly.

Step 5 –In a large mixing bowl, combine the ground beef and eggs.

Step 6 –Add the cooked onion mixture, the Italian seasonings, pepper, salt, and granulated garlic, mixing well and forming into a log.

Step 7 –Place the log on the prepared baking sheet.

Step 8 –Bake the meatloaf for 25 minutes.

Step 9 –Brush the top and sides of the meatloaf with the barbecue sauce.

Step 10 –Continue baking until the meatloaf reaches an internal temperature of 165 degrees F, about 30-45 minutes.

Step 11 –Allow the meatloaf to rest for 10 minutes before slicing and serving.
