Grilled Potato Skins

The sign of a true grill master is the ability to whip up just about anything using the grill, such as everyone’s favorite side dish! Grilled Potato Skins are exactly what you would think and more; buttery, fluffy, crispy potatoes coated in butter, grilled, and topped with sharp cheese and crumbled bacon. It’s savory and succulent and, thanks to the grill, extra-summery! Potato salad might just have to take a back seat next to these Grilled Potato Skins!

Ingredients

  • 2 large baking potatoes
  • 2 tablespoons butter, melted
  • 2 teaspoons fresh rosemary, minced, or 1/2 teaspoon dried rosemary, crushed
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup cheddar cheese, shredded
  • 3 strips bacon, cooked and crumbled
  • 2 green onions, chopped
  • sour cream, to taste, for serving

Directions

Step 1 –Preheat the grill to medium heat.

Step 2 –Cut each potato lengthwise into 4 wedges.

Step 3 –Cut away the white interior portion of the potato so that about 1/4-inch is left on the potato skins. Reserve the white portions for a separate use.

Step 4 –Place the skins on a microwave-safe plate.

Step 5 –Microwave the potato wedges uncovered until tender, about 8-10 minutes.

Step 6 –Combine the butter, the rosemary, the salt, and the pepper.

Step 7 –Brush the butter mixture over both sides of the potato skins.

Step 8 –Grill the potatoes, skin-side up, uncovered, over direct heat until lightly browned, about 2-3 minutes.

Step 9 –Turn the potatoes and position them over indirect heat for 2 minutes.

Step 10 –Top the potatoes with the shredded cheese.

Step 11 –Cover and grill the potatoes until the cheese is melted, about 2-3 minutes.

Step 12 –Sprinkle the potatoes with the bacon and the green onions.

Step 13 –Serve with the sour cream.
