The time required to bake a potato is different for convection and conventional ovens

In a conventional oven, a medium-sized potato of 150 grams cooks in 90 minutes at 325-degree Fahrenheit, 60 mins at 350 degrees Fahrenheit and 45 mins at 400 degrees Fahrenheit. A large-sized potato (approximately 230-280 grams) can bake in 60 to 80 minutes at 350 to 400 degrees Fahrenheit.

Why Does It Take So Long To Bake A Potato?

The baking time of potatoes depends on three factors- the type of oven, temperature and size of the potato.  

When cooking a potato in the oven, air transfers heat to the potato, cools down and lingers, acting as an insulator. In a convection oven, a fan continuously blows air around the potatoes. Therefore, the air cannot act as an insulator, and the potatoes cook quickly. On the contrary, conventional ovens contain top and bottom heating elements. Hence, the heat takes longer to get to the potato through the insulating layer of air. 

Once the heat reaches the potato, several changes take place. The starch granules packed inside the potato absorb moisture. This moisture soon turns to steam that expands with great force, separating the starch granules, giving rise to a fluffy baked potato. 

These processes start at an internal temperature of 60 degrees and end at 100 degrees. Therefore, it takes a while for the potatoes to reach this temperature, become soft and cook thoroughly. 

Potatoes cooked at higher temperatures reach the desired internal temperature faster. Therefore, potatoes cook quicker at 400 degrees Fahrenheit than at 350 degrees Fahrenheit. 

One must remember to poke holes in the skin of the potatoes, as those without holes tend to explode in the oven due to steam buildup. 

The last time deciding factor is the size of the potatoes used. Medium-sized potatoes cook faster than large ones at the same temperature. This difference of time occurs because heat will always travel from the outside and penetrate towards the inside. 

Therefore, heat penetrates faster throughout a smaller potato with a lesser diameter than a larger one.
