Guaco Tacos

As anyone placed in front of a bountiful bowl of guacamole knows, this creamy, herbaceous, refreshing dip often steals the show from any meal. Guaco Tacos uses this knowledge to its advantage by making the guac the star of the show from the beginning. Each soft, warmed tortilla is stuffed with spicy, smooth guacamole, crunchy lettuce, and hearty beans, so it’s just as hearty as other tacos without distracting from that amazing guac flavor. Guaco Tacos are fast, easy, and as fun to make as they are to pronounce!

Ingredients

    For the salsa & guacamole:

    • 1 (14.5-ounce) can of whole tomatoes, drained and rinsed, patted dry
    • 2 Roma tomatoes, quartered
    • 1 onion
    • 1 clove of garlic, coarsely chopped
    • 1/4 cup fresh cilantro
    • 1/2 jalapeño pepper
    • 4 avocados, halved
    • salt, to taste
    • pepper, to taste

    For serving:

    • 12 (6-inch) whole-wheat tortillas
    • 1 (15-ounce) can of kidney beans, drained and rinsed
    • 2 cups romaine lettuce, torn

    Directions

    Step 1 –Preheat the oven to 350 degrees F.

    Step 2 –Combine the whole tomatoes, the Roma tomatoes, 1/2 of the onion, the garlic, the cilantro, and the jalapeño in a food processor. Chop roughly without puréeing.

    Step 3 –Scoop the avocado into a large bowl and add and the remaining onion, mashing until smooth. Season the avocado mixture with the salt and the pepper.

    Step 4 –Spread the tortillas in a single layer on a baking sheet. Place in the oven until warm, about 5 minutes.

    Step 5 –Spread the tortillas with the guacamole. Top the guacamole layer with the beans, the salsa mixture, and the lettuce, and serve.
