Ham Bone Soup

Ingredients

  • 1 large onion, diced
  • 1 tablespoon butter
  • 1 meaty ham bone
  • 1 pound Yukon gold potatoes, diced and peeled
  • 3 medium carrots, sliced
  • 2 ribs celery, sliced
  • 1 cup frozen corn, thawed
  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 7 cups chicken broth or water
  • 2 bay leaves
  • 2 sprigs fresh thyme or 1 teaspoon dried thyme leaves
  • 1/4 cup fresh parsley

Directions

Step 1 –Heat a small skillet over medium heat.

Step 2 –Add the onion and the butter to the skillet and cook until slightly softened.

Step 3 –In a slow cooker, combine the onion, the ham bone, the potatoes, the carrots, the celery, the corn, the beans, the broth, the bay leaves, the thyme, and the parsley.

Step 4 –Cover the slow cooker and cook on high heat for 6 hours or on low heat for about 9-10 hours.

Step 5 –Transfer the ham bone, the bay leaves, and the thyme sprigs from the soup.

Step 6 –Pull the ham off the bone, chop it up, and add it back into the soup.

Step 7 –Stir and serve.
