Healthy Baked Oatmeal

Ingredients

  • 2 tablespoons unsalted butter, plus more, melted, for the baking dish
  • 1 large egg
  • 3 cups milk
  • 1/4 cup maple syrup
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups old-fashioned oats
  • berries, to taste, for topping
  • nuts, to taste, for topping

Directions

Step 1 –Lightly coat an 8×8-inch baking dish with the melted butter.

Step 2 –In a large bowl, whisk the remaining butter, the egg, the milk, the maple syrup, the vanilla, the cinnamon, the baking powder, and the salt together.

Step 3 –Stir the oats into the milk mixture.

Step 4 –Pour the oatmeal mixture into the prepared baking dish, cover with plastic wrap, and refrigerate for at least 8 hours and up to overnight.

Step 5 –Arrange a rack in the middle of the oven.

Step 6 –Preheat the oven to 350 degrees F.

Step 7 –Let the oatmeal mixture sit at room temperature while the oven heats.

Step 8 –Uncover the baking dish and stir the oatmeal mixture to redistribute the oats and the milk.

Step 9 –Bake the oatmeal mixture, uncovered, until it is puffed and the center is set, about 45 minutes.
