Healthy Breakfast Casserole

Ingredients

  • 8 ounces spicy or sweet turkey sausage links, casings removed, and meat crumbled
  • 2 scallions, sliced
  • 6 large eggs
  • 6 large egg whites
  • 1 3/4 cups 1% milk
  • kosher salt, to taste
  • pepper, to taste
  • 1 (9-ounce) package frozen chopped spinach, thawed and drained of excess liquid
  • 3/4 cup cheddar, shredded
  • 1/2 cup parmesan, grated
  • 1/2 whole-wheat baguette, cut into 3/4-inch cubes

Directions

Step 1 –Coat a 3-quart casserole dish with cooking spray.

Step 2 –Heat a large, nonstick skillet over medium heat.

Step 3 –Add the turkey and the scallions to the skillet and cook, stirring to break up any large chunks, until browned and cooked through, about 10 minutes.

Step 4 –Transfer the skillet away from the heat and allow it to cool slightly.

Step 5 –In a large bowl, whisk the eggs, the egg whites, the milk, the salt, and the pepper until combined.

Step 6 –Add the cooked turkey, the spinach, the cheddar cheese, the parmesan cheese, and the bread to the egg mixture and toss to ensure all the ingredients are coated.

Step 7 –Evenly spread the egg mixture into the prepared casserole dish.

Step 8 –Cover the dish and refrigerate for at least 6 hours and up to overnight.

Step 9 –Preheat the oven to 350 degrees F.

Step 10 –Bake, uncovered, until set and lightly brown on top, about 30 minutes.

Step 11 –Serve.
