Ingredients
- 8 slices bacon, chopped
- 2 large sweet potatoes, peeled and diced into 1/2-inch-thick cubes
- 1 cup yellow onion, chopped
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked or regular paprika
- salt, to taste
- freshly ground black pepper, to taste
- 4 cups kale, tough stems removed, chopped, rinsed and drained, packed
- 1 large avocado, diced
- 4 slices whole-grain bread, toasted and buttered, for serving
- 4 eggs, fried and warm, for serving
Directions
Step 1 –In a deep-sided, 12-inch, nonstick skillet over medium-high heat, add the chopped bacon pieces and cook until they are crisp, about 6-8 minutes.
Step 2 –Place the cooked bacon pieces on a paper-towel-lined plate to drain and cover to keep them warm. Reserve 2 1/2 tablespoons of the bacon drippings in the skillet and discard the rest.
Step 3 –In the same skillet over medium heat, add the sweet potatoes, the onions, the cumin, the paprika, the salt, and the black pepper to the reserved bacon drippings and cover the skillet. Cook, stirring frequently, until the sweet potatoes have softened, about 10-12 minutes.
Step 4 –Add the kale to the sweet potato mixture and return the cover to the skillet. Cook, stirring frequently, until the kale wilts, about 1-2 minutes.
Step 5 –Transfer the skillet to a wire rack. Add the cooked bacon pieces and the avocado.
Step 6 –Serve the hash with the toast slices and the fried eggs.
