Ingredients
- 2 tablespoons extra virgin olive oil
- 1 pound extra-lean ground turkey
- 1 teaspoon garlic, minced
- 1/2 cup yellow pepper, diced
- 1/2 cup onions, diced
- 1 1/2 cups sweet potato, diced
- red chili flakes, optional, to taste
- salt, to taste
- freshly ground black pepper, to taste
- 1/2 cup mozzarella cheese, optional, shredded
- fresh parsley, optional, for garnish
Directions
Step 1 –Heat a cast-iron skillet over medium-high heat. Add the olive oil and heat until the oil starts to shimmer.
Step 2 –Add the ground turkey and garlic to the skillet and use a wooden spoon to break up the turkey as it cooks.
Step 3 –Cook for about 5 minutes, stirring occasionally.
Step 4 –Add the yellow peppers and onions and cook until the onions are translucent, about 5 minutes.
Step 5 –Add the sweet potato, red chili flakes, salt, and pepper.
Step 6 –Put a lid on the skillet and continue to cook until the sweet potatoes are fork tender, continuing to stir occasionally, about 10-15 minutes.
Step 7 –Preheat the oven to 400 degrees F.
Step 8 –When the sweet potatoes are fork tender, sprinkle the mozzarella cheese evenly in the skillet.
Step 9 –Place the skillet in the oven until the cheese is melted, about 5-7 minutes.
Step 10 –Garnish with parsley and serve.
